Boxing Gloves + Bowie Knife, fill the rest of your inventory with good food, grab nearby pasta if you run out. Stab him in the back while he's eating, avoid his plates.

Fire axe + Sledge hammer. Works perfect. I found the chef the easiest psyco. Had some cheap moves though.

Just baseball bat and nails. Get him from behind and the rest is history just dodge his attacks and you'll be fine

Any melee weapon + gun of some sort. Take aim as he's running to eat and shoot just as he starts, that'll interrupt his eating and you can continue to hit him with whatever you've got. Repeat this a few times and he'll go down.
