So I usually don't have a rogue in my party which means I have to pass up a lot of chests.  Do the chests have all the good stuff in them, because I don't want to miss all the good stuff just because I can't open the chests.

There's some sidequest stuff (most notably, the 12 love letters, and a couple of optional bosses) occasionally, but no.  You're not missing much.

unless you want some more deathroot or elfbark then no.

Well that's good to know, I was scared I was cheating myself out of better weapons and armor.  thanks guys.

Yeah, perhaps my biggest  gripe about the game is the pitiful lack of epic loot.

Yeah, you can skip them.

Locked chests are a small way for someone playing with a rogue to make a little more money by selling goods and therefore be in a better position to buy the best equipment from vendors (some of which is extremely good).
 
But other than that I agree with everyone else.  You aren't missing anything important.
