Hi friends! Here's some thoughts!
Ben started with a 1/100 HG and I think that was the right call. 1/100s are bigger scale than 1/144s so you're working with bigger pieces. High Grade (HG) is a great starting place. There's also a line called Full Mechanics that's a bit more complicated that HG (the only FMs are from a show called Iron Blooded Orphans which is a great and sad Gundam series).
If you don't want to do stickers, skip em! Who cares!
If you're familiar with a show, buy a kit from that show! If not, just pick something you think is cool.
Snipper clips are the one tool you want, though you CAN get away with wire cutters if you need to. I also have an iFixIt kit because the spungers work great and having tweezers helps with sticker application.
I buy a lot kits from Amazon. Right now, look for amazon sellers near you, fulfilled by Amazon and expect it to take a while. Barnes and Noble is/was caring Gunpla. DBZ kits were in stock in GameStop as of the end of last year, not sure if they still are.

I'm not streaming Gunpla tonight (I'm finishing a Gogeta kit and then doing a LEGO set) but I often build Gunpla and will be starting one on Saturday and I'm always happy to answer questions in chat!
