If you choose the New Game + Option, does it save your original play through?

You keep your original with a new game+ they both count as completely different careers when you choose "change career"

@DVzomb: yes, if you go to the load screen you can 'switch careers'.

What can you change when you start a new game+? Just class? Or gender too?

You can only change appearance not class or gender.
