Wheat beers better do you think they are better young or aged? I find conflicting reports on brewing this type of beer.

After a week in my closet my Hefe has gone from 1.052 to 1.016, I might give it another week to ferment and cold crash then bottle but it is totally a flat beer. A little citrusy (added orange peel + a tiny bit of coriander) but it tasted fairly good!
