I also came here to say that Danny's audio seems to be synced a couple of seconds ahead. For an example, see 45:40 where he starts responding before Brad asks him and then there's a gap of silence afterward.
I think that lack of control at the beginning of levels is because the game doesn't recognize you preloading an ollie before the level starts. I was having the same problem. You can't beat Tony Hawk with half an X press, I guess.
If you collect all of them in each level, it unlocks... something. The challenge tracker has a section for secrets that that's a part of, but it doesn't tell you what it does until you get all of them.
I have a genuine, unironic affection for Mr. Bones. It's a shame they immediately skipped the Glass Shards level, because it's an unassuming platform section backed by a several-minute monologue about the nature of the blues (from blues musician Paul Pena) for no reason whatsoever.

There are a lot of neat little ideas in that game, they just don't really add up to anything.
@dudelongcouch: It starts at 31:50 and you hear it for the next couple of minutes. It's playing while they talk to Santa, the camo guy, and the patch guy.
@dudelongcouch: No, I meant the Christmas-y music playing underneath that (I guess I didn't know it was two tracks overlapping). It fades as they move to a different area, so I guess it's supposed to be playing from a certain location, but that's not helping me find it.
