Not sure if it's your thing, but Astroneer is a really fun resource-gathering and crafting game without many of the usual "survival/crafting" trappings (such as endurance, hunger, sleep, etc.). While you can die (and then respawn), it has an extremely chill atmosphere where you decide what to do next, and then do it in your own time. While there is both a story and an "end-game" of sorts, it's all about what you would like to do without any external agendas breathing down your neck. It supports both single player and online co-op.

I think I spent about 80-90 hours in Elder Scrolls: Oblivion before even touching the main quest (besides the things you're forced to). Once I got out of the sewers I just began exploring the world and all the side-quests in it. It was awesome. The main quest... not so much.
