In WoW probably the steam motorcyle. I got Nightmare's mount in early Burning Crusade so that was cool for a long time, and I was one of the first owners of the Red Proto Drake in the world so I guess I still have a fondness for that one as well.
Warhammer was a fantastic game but I don't really remember anything special about the mounts other than they looked dumb when you jumped and spin a la every other MMO. It was cool having 200 mounted people ride up to a keep and so on and ramboing in on a mount to go murder people with a premade in scenarios.
I like D-Horse and Roach, I don't like the Dragon Age: Inquisition mounts. This is the most fun I got out of D-Horse, always finicky using him in combat though; definitely could have given him side mounted rocket launchers or something:

Thinking about it more I guess the obvious answer is Red Hare, no other mount has as great of an impact on a game; though the best cavalry experience is definitely Kessen 3.
For a less traditional answer I'd go with Vultures from Starcraft, frequently used to represent the Naz-gul in Used Map Settings games, to great effect.

Let's all be honest here the only real answer is D-Horse but my close #2 is my Veridian Netherdrake from World of Warcraft. It was an epic and super-expensive questline to complete back in Burning Crusade and when I completed it I resisted the urge to pick the 'cool' (but samey-looking) black, blue or purple drakes and chose this wicked green mothertrucker.

When I was 18 my father passed away, I spent every night the entire summer venting my anger in quake 3 multiplayer in order to be a functioning human being during the day. I can't look at that game anymore without having all those feelings wash over me.
I was in WoW when that happened, maybe I'll return someday. I actually never thought about the reason I left!?
I promised myself I'll do couple things with my life that I know would make him happy, I delayed these for too long.
