I had a bunch of trouble with him too, because I was also in the boat of having no health items. Though, I ended up cheesing it. You're able to quit out and replay any of the previous chapters and gain nanopaste there. Then, if you save and quit and restart the last one, you'll have all the nanopaste from the other chapter. Yes, I had to redo chapter 7, but it's a lot easier the second time. That was what let me beat him. And because I had health items, I could run away from the stuff he throws and not worry about cutting it. I was playing on hard, so I tell myself that I didn't cheese it too badly...
