The reason there's so much Yoshi's Island stuff in the Mario Kart line is because the Japanese version of the park has another Yoshi-themed ride, Yoshi's Adventure, but there wasn't enough room in the Hollywood park to add it so they added a bunch of the scenery to make up for it:

It's a super slow train ride that goes around the outside of the park, but it least has some good music and Captain Toad and Mario Galaxy appearances.

I thought there would be more actual rides. The Mario Kart one seems very reliant on the screens, the physical ride itself seems kind of boring. But the AR stuff is probably impressive in real life. The animatronics and general set design of the place are pretty amazing.

I hope I can figure out a way to go here at some point. I'm afraid of flying, and trains seem messy now. I'll probably end up saving up vacation time and doing the drive. Having my car there would at least give me some freedom, which in turn should help alleviate my travel anxiety.

It's kind of a limit to the lack of available space in Universal Hollywood. Like it's just about the size of a warehouse/soundstage that they were able to carve out in the corner for it.

Universal Japan's version is over a larger space and has the Mario Kart ride and a slow "People Mover" type Yoshi ride. Universal Florida has more space and is supposed to get a more fully featured version.

I also forget where it's supposed to be implemented, but I've seen diagrams and even supposed arial photography of a test version of a Donkey Kong minecart ride that's a really impressive concept. Basically for the most part it looks like your cart is going over mine cart tracks but there are occasional gaps in the track you "jump" and such. In reality, there is a second proper rollercoaster track hidden a few feet below and your carts are on stilts a good distance above the hidden track but aligned with the visible "rails".

Ive watched a lot of theme park videos due to my kids loving them, and I've got to say the touches that Jan took on this puts it in the very top tier. Great work!
