I just got accused of "cheesing" because I built three gateways. WHAT? Just wondering if anyone can confirm whether or not what I did was considered "cheesing". Because this is my usual build.

cheese?
Disregard what people tell you in multiplayer. Sometimes I think that everybody I play with is either a sociopath or a 13-year-old kid. 80% of the matches I play just degenerates into insults and name-calling, regardless of my strategy. Of course there's no way that building three Gateways can be considered "cheesing". Hell, even if you were cheesing, it's a perfectly legal strategy that's oftentimes very successful. Do whatever strategy works for you, and ignore what you hear from other players. Sadly, this is just something I've learned about StarCraft 2 multiplayer.
On a scale from American to Limburger in stinkiness, your cheese was American- so it isn't cheese.
Cheesing, correct me if I'm wrong, is when you try to build, for example, a barracks in your enemy's base and pump out marines as soon as possible.

Not gonna watch your replay, but I will say that early 4gate is a legitimate build-order, so I doubt you building three gateways is cheesing.
Other dude just sucks.
A cheese strategy is doing something really stupid, like running a probe into their base at the beginning of the game, building a pylon and building cannons inside their base. Cannon rushing is the fucking worst! =P
Another cheese strategy is when playing as Terrans, you save up resources early game and fly your command centre to the enemy base with some workers in it, land it, and turn it into a Planetary Defence fortress right in their base, you heal it with your workers while it converts. Its a super all in strategy, like most cheeses.
As you can see, theres a huge difference between regular strategies and cheese ones. Cheese strategies are all-in and designed to win early and quickly. Generally its a definite defeat if it fails.

The closest thing to cheese in SC4 is everyone on a single side in 3v3 or more zergling rushing onto a single base. Because it can't really be defended against, cus SC2's maps and shit suck on 3v3 or more. That's where ragequitters go. Anyhow in 1v1 or 2v2, nothing at all is fool proof. Therefore, there is no cheesing in 1v1 or 2v2. Just sore losers.

Its a huge pain having to check my base to make sure I'm not getting cannon rushed though, takes away a bit of mineral time. Especially on some maps where there is a lot of unexplored space in your base.
For my mind a cheese is a build that can't be recovered from, or at least the chance of doing so is really low. The kind of build which is all out win or lose. Something like a 6 pool zergling rush is kinda borderline but I'd definitely consider a reaper rush to be a cheese build if you go and invest in more than 3 of them. A 3 gate protoss build sounds very standard though...

Well the P cheese build is 4 Gate. So 3 Gate is actually OK. U can go 3 Gate Robo on one base, it's actually pretty standart built. If you're macroing fantastically u could skip one of those gates, but 3 Gate is still OK. U shouldn't feel bad about winning a 4 Gate all in, its annoying and wont make u much better at the game but its still a kind of viable strategy.
