    I know in Oblivion you were stuck with your choice, but have they remedied anything like that in Skyrim?

    If you're playing on the PC I'd open the console and try this: showracemenu.

    This is something I wish they would have added to Skyrim, it really sucks you can't change hairstyle and war paint.

    This works but you should be careful of it. It's the exact same command used in Oblivion but it also resets all of your stats when you do. There is a way around it though but I don't know if it applies to Skyrim as well.

    Showracemenu make changes Do Not Confirm! - save then quit then load. In Pblivipn that was the proper safe way to do it. Prolly same for Skyrim
