If fire will be a common element that dragons and other major enemies will utilise, I will likely go as a Dark Elf with a custom class.  The custom class though would take some explanation once I know how classes work in the game, as I usually look for builds that makes my class a 'Master of All' class that is possible in Elder Scrolls games.

Yeah they are, because they found people just kept picking the wrong ones for them and starting again all the time. So now you don't get anyone asking you what class you are, I guess they're just gonna be able to level up all skils the same instead of some quicker which then made your overall level go up. A good idea if you ask me!
 
But yeah on to the question I have know idea really I will play it through with every race using all the skills ect good and bad.

I play them all.  The orc tank, the little old lady (insanely powerful) mage, the pure good thief and the pure evil assassin.  Elder Scrolls games offer so much variety that even playing four or five different characters the quests turn out so differently, you have such a different experience, that it's worthwhile doing multiple playthroughs.
 
My usual first/preferred build, though, is a female stealthy thief/assassin.

argonian, probably a hybrid mage and warrior
argonian makes sense for being dragon-bron, being a reptile and all
