Baked crispy chicken? Baked, Mr. Scanlon? As a boy of Southern descent, I am personally offended at your brazen evasion of fried chicken and all the health issues it causes. How dare you, sir. How dare you.
Sandwich
Sandwiches are usually meat, cheese and/or vegetables placed between two slices of bread. They are featured in many video games, usually to replenish health.
Fritos-Breaded Chicken Sandwich with Sriracha Aioli
Being stuck in a Uni dorm with just a microwave, I will probably just buy microwaveable chicken and just mash the fritos into it for the sandwich. Oughta do, oughta do... :(
@heatDrive88: Hahaha. Noted. I'm potentially going down a very dangerous and endless road if i start importing American groceries.
You should strongly consider using Panko instead of Fritos. You lose the comedy value, but you'll also lose a lot of the calories, and you wont lose any flavor. Add a dash of salt to the breading to compensate.
boyish good looks, adept archer, natural talent for flying- and now aspiring chef? it's damned good thing you're allergic to gluten, or else you'd be a threat to us all!
joking aside- thanks for sharing, will have to give this one a shot!

As fun as the Fritos are this person is correct. Panko will give you better coverage, more crunch/texture, and will work even better with seasonings.
Now I'm off to buy Fritos and Panko for a comparison! Worst case I end up with a Fritos and Panko breaded chicken sandwitch!
Edit: Rice Chex apparently make for a good gluten-free Panko!
I.....have all those ingredients already! Including the almighty Hot Cock. I'll have to try it out for dinner tomorrow!
P.S. The Oatmeal comic is necessary to inform the uninformed of Hot Cock Sauce! http://theoatmeal.com/comics/sriracha
@drewbert: Have you ever tried sriracha mixed with Japanese mayo? I first started putting them together to make spicy mayo for homemade sushi and then realized it goes amazing with everything. Something about the Japanese may gives it a zing our homegrown version doesn't have, although I can't put my finger on what it is exactly.
Really happy you took the time to actually go super in-depth into your dope sandwich making process. You are the best duder, and tomorrow my lunch will be too.
@drewbert: Try whisking some honey into your Sriracha and then using that as a sauce, I think you'll find it really complements the corn flavor of the fritos. As a huge fan of Sriracha and anything Southeast Asian (phô is my comfort food) I use this sauce all the time with chicken on the grill. No reason it couldn't work with corn chip breading.
This could also be a way for you to introduce people to the dish who aren't hardy enough to tolerate straight up Sriracha. My other go-to Sriracha-based sauce is 2.5 parts Olive Oil Mayo, 1 part Sriracha, and lime juice. You could dip a car bumper in that stuff and it would taste amazing.

That's a lot of salt.
Salt makes things taste good! I think the chief mistake home chefs make when cooking (besides overcooking everything) is not seasoning their food liberally enough.

Whats a good substitution for Frito's outside of America?
You're missing out if you can't get Fritos...I don't know of an Australian substitute. Chili with Fritos on top is serious comfort food.
You could try using some well-seasoned instant mashed potatoes in lieu of Fritos, it turns out awesome.
