Something that would clearly be awful but hopefully in a fun way. How about a Gears of War anime.
Games you'd turn into a Movie, TV show or Anime
I would watch a Red Dead Redemption show. Imagine an hour long, mature, HBO show, that starts years before the events of the original story and gradually builds towards the games conclusion.
For anime I would go with Tekken, because I think the story in the first few installments of that game is loose enough that it would allow for a lot of freedom in an adaptation, and because the colorful characters, crazy action, and occasional goofiness would work well in an anime. I know there was that animated movie, but it was too short to really work. I would also be totally down to watch a Chrono Trigger, or Chrono Cross anime, even if it means I'd have to put up with Akira Toriyama-ness.
As for movies I don't really care, I don't think the formats translate very well in that direction.
It's Apocalypse Now. Which is a great movie, but already exists.spec ops the line could be very interesting as a movie
Movie - Shadows of the Damned
TV Series - Persona 4
Anime - Hotline Miami (Get Yoshitoshi ABe on this.)
I would love to see Quantum Conundrum as a Saturday morning cartoon show. It could be a time traveling tv show similar to Mr Peabody and Sherman except the boy in the game could change dimensions and alter history.
For example, the boy saves president Lincoln by changing the dimension into fluffy dimension and Wilkes Booth's bullet change into cotton while changing theater into pink and fluffy and Abe Lincoln wears a pink fluffy suit and top hat.
Plus the game already has a kickass themes song.

Sadly Tekken had an anime and it was very very bad, but i would like to see them try again.
