is there any way I can play the japanese(NTSC) version of Wii sport: Resort on my european(PAL) Nintendo Wii?

Only if you have a Freeloader disc and a Wii that has not been updated recently (like Animal Crossing).  Otherwise a big no.

My Freeloader died with the Animal Crossing update.

Oh yeah, forgot about that. But I'd say waiting is your best bet anyway. Besides, why would you want to deal with Japanese text?

You couldnt play it without Wii Motion Plus anyway, unless you imported one of those too.

Freeloader or software / hardware mod, I guess.  Although when Wii Motion Plus comes out they may be able to block the mods that would allow region free, I don't know.

Go there and search for Bannerbomb. Do what it says.

Then get Homebrew Channel from WiiBrew as well, and using Homebrew Channel (or one of the programs from WiiBrew) you can get a region free wii.

I havent tested the region free part myself (dont own or so far want any non-uk Wii games) but they are supposed to work. Bannerbomb works awesomely though :)

Though im not sure how the wii will handly the video output (since its NTSC not Pal).

Video output will usually be fine if you have a 60hz television, if not you'll get black and white. Sometimes you'll get black and white anyway though.
