Well, that was a surprise.

Wow, people replied to my last blog. Who would've thunk it? Anyway, assuming anyone checks out any of the entries I make, what should I focus on for the next week, adding stuff relating to random PC Engine games, or stuff relating to random Famicom games? 
 
And, of course, here's another favourite chicken recipe! 
  
Thai Barbecued Chicken
8-10 pieces of chicken (or more) 
 
MARINADE: 2 lemon grass stalks, chopped 
a 1 inch piece of fresh ginger, peeled and sliced thinly 
6 garlic cloves, chopped 
4 shallots, chopped 
1/2 bunch cilantro roots, chopped: If you cannot find cilantro roots (they can be hard to come by sometimes...) you can substitute leaves instead.
1 tbsp of palm sugar 
1/2 cup coconut milk 
2 tbsp Thai fish sauce 
2 tbsp soy sauce
  
Make the marinade by putting all of the marinade ingredients in a food processor and processing until it becomes relatively smooth. 
Place the chicken in a dish and pour the marinade over it, then cover and let it sit in the refrigerator overnight.  
Remove the chicken from the marinade, but save the marinade! Barbecue the chicken over a moderate heat for at least 20-30 minutes or until it's done to your tastes, brushing with the marinade periodically. Be sure to turn the chicken once or twice! When the chicken is done, serve it immediately, garnished with lime wedges and fresh red chilis.
