As far as I can work out his thought process is this:
1. Brock was poisoned with lily of the valley (which I swear he knows because the doctors told him eventually?)
2. Walt told Saul and Huell to lift the ricin cigarette from Jesse
Conclusion - Walt poisoned Brock, even though he knows that Brock was poisoned with lily of the valley and not ricin?
I could well have forgotten an important detail in all of this so please bear with me!
This will help you:
Jesse suspected it was Walt and the ricin from the moment he found out Brock's symptoms. Turns out Jesse was right, but Walt managed to convince him otherwise through his genius Heisenberg manipulation ("That's what Gus WANTS you to think!" "Who do you know is ok with using kids?" "I have a family, children, how can you say that of me?"). However when Jesse finds out it was Lily of the Valley, he finds out that Gus couldn't possibly have poisoned Brock. I'm pretty sure Jesse/his mother would have talked to Brock at some point saying "Hey kid, did you eat any weird berries or anything like that?". "No", would've been Brock's reply. Jesse would then be wondering why that happened and I bet he always had at least some lingering suspicion that Walt poisoned Brock because it makes the most sense. Walt needed Gus to die to save his own life. how could Walt have Gus killed? By turning Jesse against Gus. Jesse however can't prove how Walt did it and so lets it go, thinking he's just acting crazy and Brock must've ate something bad.
Now we move onto the current episode. We know that Jesse is DEEPLY suspicious of Walt due to Mike's disappearance. Jesse is tired of Walt's manipulative bullshit. So when Jesse realises his dope has been lifted by Huell, he realises that Huell just as easily could've taken the cigarettes with the ricin and he was right all along. He KNOWS Huell took his dope because no one else possibly could have. Bear in mind now, Jesse is in deep emotional distress at this point. He's acting wild and clearly doesn't give a fuck anymore. So to make sure his suspicions are confirmed he bursts into Saul's office and demands a confession at gunpoint, which Saul gives him. Jesse now 100% knows it was Walt that poisoned Brock.
Also bear in mind that Jesse is a very smart individual and it's perfectly possible for him to connect all the dots, especially given this much circumstantial evidence against Walt.
Edit: Just to reiterate, he got the confession from Saul. You can also play up the angle that Jesse was just acting irrational and thought he was right all along leading him to beat the shit out of Saul. The fact that Saul told Jesse the truth cements everything. That's what really matters. If Saul hadn't cracked then Walt had a slim possibility of convincing Jesse again, but not now.
