I own both and have to say Demon's Souls.  I've only played through two Fallout 3 DLC (Point lookout and Broken Steel) but while point lookout worked pretty well broken steel was literally plagued with bugs.  It may be somehow different with the GOTY edition but I somehow doubt it.  Demon's Souls (15 hours in right now) has so far been my favorite 15 hours of gaming this whole year.  The difficulty I feel is just right and I've yet to get frustrated at all.  
 
Also you've already beat Fallout 3 so you should totally get Demon's Souls ;)

I'm absolutely loving it so far.  I don't find it frustrating at all just because I love the gameplay enough to make going through the levels over and over again fun.  I'm 15 hours in and while the game is challenging it's not "cheap" so when you do die (at least for me it's this way) you'll want to figure out what you did wrong and how to fix that mistake.  Personally I think it's compelling enough to keep me into it for multiple new game +'s (this coming from someone who very rarely plays through a game twice) but I'm not you.  Watch some videos and the quick look.  If you like the look of the fighting then I say go for it.  The game can be punishing but it's much more rewarding when you overcome the obstacles before you.  However if you're not sure about it, I'd say hold off on getting it.  There's going to be a lot coming out very soon and it might detract from Demon's Souls.  I have to say I completely agree with what Dave said in the quick look in that this is a game he'd get during the down time of games releasing.  So if you plan on getting a lot of games coming up soon maybe hold off a little while until there's not a whole lot coming out?

Yeah, I'm not even going to try to figure out what this is....if it somehow has something to do with Dragon quest it'll be the happiest day of my life but...I'm not getting my hopes up.  Also that smiley thing scares me...

I thought the same with the price, but it's ten bucks cheaper on psn :D
 
Also they left a comment on the Euro Playstation blog and said it'll be out this coming week or next...so yeah....
 
I've already played it on the PC, it's a great game and I'll for sure be getting it on PSN.

That logo at the end brings me back.  I've been wanting, and dying for a new 2D Sonic game....I want to be excited...that end with the blacked out logo WANTS me to be excited for this...but considering the past few Sonic games and how I've not been fond of them it's tough.  Here's to hoping...
