I too have a limited patience and fondness of loot based games but there are some good alterations of the formula.
Take God Eater. A finite amount of weapon variety that can be crafted. After every mission a modifier is chosen among four dropped variants. The chosen one can be applied to fitting weapon type and thus you can keep your weapon for a prolonged time while making incremental upgrades. Noteworthy to this is that every weapon can have three to four modifiers so while the loot system isn't as varied as a Diablo game it increases the overall value of the game.
Hey there! I've just rage quit on the Truth boss, also known as the any% end boss. After about 70 deaths I threw in the towel because having the reaction ability to pull the bow, dodge ground flares, dodge the enemy arrow and at the same time hit the enemy with your own arrow within a 1 second window seems insanely unfair.
Is this really a good design choice to prolong the game's length by making it unnecessarily unfair? The game never game me room for error in previous boss battles but this seems to be in a whole another level.
Other games on this topic might be Super Meat Boy where every error felt as your own and not the game messing with you. I can honestly say that it was a long time ago I rage quit a game but Titan Souls got the better of me. I just don't see a good design choice in making a game insanely hard to the point where the player feels like it's unfair.

@matmaelstrom11: Yeah I did manage to beat it on heroic but seriously, fuck that design choice. Who in their right mind thought a repeating boss scenario would be entertaining?
Well I had the same feelings as OP but after putting a few hours in it I felt Siege was the SWAT game we never got. Since then I've played every day because the challenges reset every 12-24h.
Also one of the few games that can ge my heart racing.
Stardew Valley does it for me. The soundtrack really helps too. Otherwise I tend to play games with good feedback-loop when I'm stressed, like Overwatch, Dead Rising and Civ 5.
