Never Ending Games is a self-explanatory concept in which a game is unbeatable and never ends, due either to the game having no true ending or because the game is not saved (or truly continued) after the last section of the game.

It is a mechanic found in most arcade games, but the term is usually used in reference to the RPG genre where the mechanic is less common, particularly "roguelike" games as well as strategy games such as Fire Emblem or Final Fantasy Tactics where characters die if they are defeated in battle. Often used as a significant plot device.
Procedural Generation refers to the creation of content algorithmically as the game is running. This content generally coexists with standard, authored content; the two are not mutually exclusive.
The act of taking on an in-game task; most often, these are provided to the player by an NPC. MMOs and RPGs are the primary users of this concept.
Rain can heavily increase the atmosphere of a video game. Some games use it to add detail to an environment, while other games use it to make it difficult to see.
Enemies that appear out of nowhere and force the player into a battle.
Random Loot is a popular concept for dungeon crawler and MMO style games. In essence, monsters or objects drop something that is considered valuable to the player with random qualities.
A Random Number Generator (hence RNG) is a system designed to randomize a sequence of numbers. Most games technically use a table of 'random' numbers, simulating random chance.
Dungeons that are generated randomly.
Games with randomly (or rather, procedurally) generated environments create new levels from predetermined pieces each time the game is played.
