As well as the scene in the original Full Metal Alchemist where Ed tells Rose that alchemists are the closest things to gods there are. I just think that particular part is such a defining character moment and is really important to the way he develops as a character, and it's all compacted in one little speech. Unfortunately, I don't think it's on Youtube. EDIT: Ah! Well, here's the full episode, but the link goes directly to the part I'm talking about.

Can't think of any movie ones of the top of my head, but this from Justice League Unlimited has always been a favorite:
no movie dialog comes to mind but this on the other hand does.
at about 40 seconds the part im talking about ends.
I'm not a big fan of Quentin Tarantino or Kevin Smith, but I do think they write some really good dialogue. I'm thinking of the Scene between Dennis Hopper and Christopher Walken in True Romance as being a really well written and well acted scene. It's badass.

@TheHumanDove: Two steps actually, you went to the trouble to actually find the clip and post it. I was far to lazy to do that... Plus I have no idea how to post videos.
Tons of lines from Titanic. Easily the world's most quotable movie for me. Also most any dialogue in A Clockwork Orange. Tons from The Dark Knight. The plastic bag scene from American Beauty. A lot of lines in Forrest Gump. Daniel Day Lewis in anything. I could watch that guy act all day even if his role was to sit silently and watch paint dry. His dialogue in Lincoln was glorious as was his stuff in There Will Be Blood and Gangs of New York. The opening scene of Kids. A lot of stuff from The Lion King. Not a movie, but any of the skits from the classic Looney Tunes shows. The Road to Perdition has some great stuff. Apollo 13 as well. A Beautiful Mind has a lot of great stuff. The opening scene of Precious. Any words written by Mel Brooks. A Raisin In the Sun has some classic ones as well as Death of a Salesman. Into the Wild. Dead Poets Society. Also, hate me if you want, but I love the writing in Juno.
And a special mention to the incredible 12 Angry Men. Seriously the whole movie is nothing but 12 guys sitting in a room talking. It is 100% dialogue. And it is fantastic.
EDIT: Forgot maybe my favorite piece of dialogue ever in a movie. In Doubt the scene with Meryl Streep and Viola Davis just rocked my world.
The entire Goodfellas movie, also Aliens Bill Paxton always provides the goods. Also You've Got Mail has some charming dialogue, Terminator 2 has some kool lines.
"Your parents death was not your fault... It was your fathers... Anger does not change the fact that your father failed to act."
"The man had a gun."
"Would that stop you?"
"I've had training."
"Training is nothing!... The will to act."
"Yield."
"You haven't beaten me. You've sacrificed sure-footing for a killing stroke."
Anyways, that may not be the best, but it sprung to mind since I watched some it the other night, the whole father part. Anyone know the film?
@Neonie: @TheHT: I had a Tarantino marathon a few days ago and I think I agree. Kill Bill's dialogue maybe wasn't as 'smart' as other Tarantino movies, but damn it had style.
I can't find it on YouTube, probably taken down due to copyright violation, but the restaurant scene in Heat between DeNiro and Pacino is the best scene in all of film in my opinion. If you haven't seen that movie, I demand that you go watch it immediately and then report back here with the results.
