It's not just for airplanes anymore: Game mascots and MMO players alike have taken to the skies. Players can use flight to quickly navigate large levels, find hidden items, or take opponents down.

One of the largest monsters that dwell in Mordor. Literally eat trolls for breakfast.
Griffons are a mix between lions and eagles. They soar high in the mountaintops in many fantasy worlds. Griffons are found in both wild and tame varieties. Intrepid explorers have often met a sticky end whilst trying to steal Griffon eggs so that they can train the young Griffons as mounts.
In the .hack franchise, Grunties are a mix between cows and pigs found in The World. Players can raise grunties to use as mounts and to trade them for their treasures.
In certain games a player will be required to fire a bow from horseback. This idea is based around the use of horse archery by nomadic tribes from Central Asia, such as the Iranians, Huns, and Mongols.
Horse riding is mostly used in games to get around from one place to another quicker than you could on foot. They can also sometimes be used in combat or racing.
The Juggernauts of Khorne are heavily armored monstrosities that wreck havoc on the battlefield in the name of the Blood God.
Loftwings are bird-like creatures that feature heavily in The Legend of Zelda: Skyword Sword.
Big flat fish. You find them in tropical waters, typically around coral reefs.
Combat based on organic (or similarly functioning) mounts. This can include melee or ranged attacks from horseback.
The Mûmakil are massive beasts of war, that participated in the Battle of Pellenor Fields.
Very large African flightless birds.
Pegasi are winged horses found in Greek Mythology.
