Fritos-Breaded Chicken Sandwich with Sriracha Aioli

Now you too can make your own Fritos-crusted Lunchtime Snack for Lunatics, as featured prominently in the most recent I Love Mondays! Also, you can sound totally awesome by adding anything to mayo and calling it an "aioli." Try it!

I adapted this creation from a chicken fingers recipe I found in a great gluten-free cookbook (I'm allergic to gluten) called Cooking For Isaiah. It has quickly become my go-to lunch, simply because it's so quick and easy to make, and because I don't mind eating the same thing four days in a row. On to the alchemy!

  • Preheat oven to 425 degrees F.
  • Cut two chicken breasts in half, lengthwise, so you have four flat, wide pieces of chicken.
  • Crush a whole 10oz bag of Fritos (I use a meat tenderizer, because it's fun) and pour the result into a large bowl.
  • Add some black pepper to the bowl (I like pepper, so I add about a teaspoon).
  • In another large bowl, beat three eggs.
  • Grease a baking sheet.
  • Take a piece of chicken and dip it in the Fritos, then into the eggs, then back into the Fritos (get as many as you can on there).
  • Place the chicken onto the baking sheet, then repeat for the rest of the chicken pieces.
  • Put the baking sheet in the oven for 20 min (or until the chicken is fully cooked).

Once it's cooked, I put all the chicken in a container in the fridge. Each morning, I slather mayo on some (gluten-free) bread, apply a liberal amount of sriracha, put the chicken on, and wrap the whole thing up in foil. When I get to the office, I put it in the fridge until lunchtime when I take it out and reheat it in the toaster oven. It's just that easy!

For the health-conscious, I calculated the nutrition facts for each chicken slab (your bread and mayo may vary):

  • Calories: 605
  • Total Fat: 32g
  • (Saturated Fat): 4.5g
  • (Polyunsaturated Fat): 7g
  • (Monounsaturated Fat): 15g
  • Cholesterol: 210mg
  • Sodium: 575mg
  • Potassium: 1165mg
  • Carbohydrates: 38g
  • (Fiber): 2.5g
  • (Sugar): 1g
  • Protein: 35g

Here's just the Fritos (2.5oz):

  • Calories: 400
  • Total Fat: 25g
  • (Saturated Fat): 2.5g
  • (Polyunsaturated Fat): 6g
  • (Monounsaturated Fat): 12g
  • Cholesterol: 0mg
  • Sodium: 425mg
  • Potassium: 875mg
  • Carbohydrates: 37.5g
  • (Fiber): 0g
  • (Sugar): 0g
  • Protein: 5g

And here's a Big Mac:

  • Calories: 550
  • Total Fat: 29g
  • (Saturated Fat): 10g
  • (Trans Fat): 1g
  • Cholesterol: 75mg
  • Sodium: 970mg
  • Potassium: 0mg
  • Carbohydrates: 46g
  • (Fiber): 3g
  • (Sugar): 9g
  • Protein: 25g

... maybe I should ease up on the Fritos.

As a former cook I'll add. Make sure to cook your chicken to at least 160 degrees. I totally make this sandwich too, except I use creamcheese instead of mayo. Awesome sandwich!

Do you think it would be ok with Doritos? Cause I cant get Fritos here, if the answer is no what do you think might be a good substitute? Maybe I cant get the same brand of stuff but I might find the same thing under a different name. Thanks!

Okay, so what's the British equivalent to Fritos? Are they an American crisp? Also i have no idea what Sriracha is, either. Other than those two sticking points, i'm ready to go!

Any corn chip should do. Doritos might be tricky because they are dusted with that cheese flavouring. To be close to Fritos, it's just a salted corn chip.

As for Sriracha sauce, it's actually quite a specific taste. It's flavor is quite sweet and spicy. It's very common in Asian cuisine - you can usually even find it at any Asian supermarket or even any larger supermarket chain if they have an Asian foods aisle. Look for a bottle with a Rooster on it that looks like this:

@heatDrive88: Right, right... pretty light on Asian supermarkets around here, but if it's a sweet and spicy hot sauce, i think the most suitable replacement would be this Thai sauce i can reliably obtain called Maggi. I'll have a snoop around the bigger stores around here just in case they stock Sriracha (thank you for the picture) though. Hm, yes i guess the flavouring on Doritos might destabilise the flavour a bit... perhaps something simpler.

I made this yesterday for lunch but I didn't have Fritos. Instead I used Tostitos which are fairly flavorless but added a nice texture. The mayo/sriracha is a must because I find chicken to be fairly dry. Also, I used a hamburger bun instead of slices of bread. I'd like to experiment doing this with some other chip varieties like spicier Doritos, etc.

A+++ would recommend.
