Fritos-Breaded Chicken Sandwich with Sriracha Aioli

Now you too can make your own Fritos-crusted Lunchtime Snack for Lunatics, as featured prominently in the most recent I Love Mondays! Also, you can sound totally awesome by adding anything to mayo and calling it an "aioli." Try it!

I adapted this creation from a chicken fingers recipe I found in a great gluten-free cookbook (I'm allergic to gluten) called Cooking For Isaiah. It has quickly become my go-to lunch, simply because it's so quick and easy to make, and because I don't mind eating the same thing four days in a row. On to the alchemy!

  • Preheat oven to 425 degrees F.
  • Cut two chicken breasts in half, lengthwise, so you have four flat, wide pieces of chicken.
  • Crush a whole 10oz bag of Fritos (I use a meat tenderizer, because it's fun) and pour the result into a large bowl.
  • Add some black pepper to the bowl (I like pepper, so I add about a teaspoon).
  • In another large bowl, beat three eggs.
  • Grease a baking sheet.
  • Take a piece of chicken and dip it in the Fritos, then into the eggs, then back into the Fritos (get as many as you can on there).
  • Place the chicken onto the baking sheet, then repeat for the rest of the chicken pieces.
  • Put the baking sheet in the oven for 20 min (or until the chicken is fully cooked).

Once it's cooked, I put all the chicken in a container in the fridge. Each morning, I slather mayo on some (gluten-free) bread, apply a liberal amount of sriracha, put the chicken on, and wrap the whole thing up in foil. When I get to the office, I put it in the fridge until lunchtime when I take it out and reheat it in the toaster oven. It's just that easy!

For the health-conscious, I calculated the nutrition facts for each chicken slab (your bread and mayo may vary):

  • Calories: 605
  • Total Fat: 32g
  • (Saturated Fat): 4.5g
  • (Polyunsaturated Fat): 7g
  • (Monounsaturated Fat): 15g
  • Cholesterol: 210mg
  • Sodium: 575mg
  • Potassium: 1165mg
  • Carbohydrates: 38g
  • (Fiber): 2.5g
  • (Sugar): 1g
  • Protein: 35g

Here's just the Fritos (2.5oz):

  • Calories: 400
  • Total Fat: 25g
  • (Saturated Fat): 2.5g
  • (Polyunsaturated Fat): 6g
  • (Monounsaturated Fat): 12g
  • Cholesterol: 0mg
  • Sodium: 425mg
  • Potassium: 875mg
  • Carbohydrates: 37.5g
  • (Fiber): 0g
  • (Sugar): 0g
  • Protein: 5g

And here's a Big Mac:

  • Calories: 550
  • Total Fat: 29g
  • (Saturated Fat): 10g
  • (Trans Fat): 1g
  • Cholesterol: 75mg
  • Sodium: 970mg
  • Potassium: 0mg
  • Carbohydrates: 46g
  • (Fiber): 3g
  • (Sugar): 9g
  • Protein: 25g

... maybe I should ease up on the Fritos.

Being stuck in a Uni dorm with just a microwave, I will probably just buy microwaveable chicken and just mash the fritos into it for the sandwich. Oughta do, oughta do... :(

You should strongly consider using Panko instead of Fritos. You lose the comedy value, but you'll also lose a lot of the calories, and you wont lose any flavor. Add a dash of salt to the breading to compensate.

I will be making this as soon as possible. I hate mayo though, so I may substitute it with bacon and/or some kind of cheese. You know, so it's more healthy.

As fun as the Fritos are this person is correct. Panko will give you better coverage, more crunch/texture, and will work even better with seasonings.

Now I'm off to buy Fritos and Panko for a comparison! Worst case I end up with a Fritos and Panko breaded chicken sandwitch!

Edit: Rice Chex apparently make for a good gluten-free Panko!

@drewbert: Try whisking some honey into your Sriracha and then using that as a sauce, I think you'll find it really complements the corn flavor of the fritos. As a huge fan of Sriracha and anything Southeast Asian (phô is my comfort food) I use this sauce all the time with chicken on the grill. No reason it couldn't work with corn chip breading.

This could also be a way for you to introduce people to the dish who aren't hardy enough to tolerate straight up Sriracha. My other go-to Sriracha-based sauce is 2.5 parts Olive Oil Mayo, 1 part Sriracha, and lime juice. You could dip a car bumper in that stuff and it would taste amazing.

Salt makes things taste good! I think the chief mistake home chefs make when cooking (besides overcooking everything) is not seasoning their food liberally enough.

You're missing out if you can't get Fritos...I don't know of an Australian substitute. Chili with Fritos on top is serious comfort food.

You could try using some well-seasoned instant mashed potatoes in lieu of Fritos, it turns out awesome.
