Honest question, and I mean no offense at all, but are you by any chance using Google Translate, or something like that? There's clearly some miscommunication going on in this thread that no one really seems able to pinpoint.
Ultimately, I think you just need to bite the bullet and force yourself to play something new. Maybe set a schedule, say X weekend, instead of playing Path of Exile, I'll devote that slot to Grim Dawn (to use your examples). Then stick to it.
I don't mean to downplay your issue, I just think that when we're in a rut, sometimes we just need to kick ourselves in the pants in order to find something exciting again. Anyway, good luck, duder!
I'm having some difficulty pinpointing what your issue is; this is kind of all over the place, honestly. It sort of sounds like you want everything and nothing at the same time. "Cyberpunk might have been amazing, if in 3rd person" is a strangely specific criticism of a game that's not even out yet. "Dialogue trees should be infinite" is a very complicated request. And why should there be a nod to COVID in TLOU2? Granted, I haven't played the game, but as I understand it, it's essentially set in an alternate reality in which COVID presumably didn't happen.

This post has way too much unironic Joker energy. I know it's hypothetical, but it just comes across as very "edgelord" and thus just not very interesting. And the stipulations about not being able to tell anyone are really odd.
Sorry to be a party pooper, but 99% of people are not secretly aspiring murderers who are only held in check by our legal systems.
Yeah, you can't force it. If she really wanted to play newer games, she'd figure it out. It sounds like she's just not that interested.
As for getting used to the controls, the thing that got my wife used to playing with modern controllers was playing co-op. She was pretty frustrated at first, but she eventually got the hang of it. Now she loves Borderlands (which is mostly what we play together). She's not much of a gamer otherwise, though, aside from some mobile stuff. She really has no interest in single-player games, but she enjoys the co-op experience enough that she was able to push through and become familiar with the controls.
So, in short, have you tried playing co-op with her, if she's open to that? Might be worth a shot at least.
I refuse to watch any BG3 content before release, but I'm super psyched that this is following the Original Sin style of gameplay. I've been a huge fan of the Baldur's Gate series since the first one, but those Infinity engine games are a bit rough nowadays. Larian's Original Sin engine feels like a proper modern evolution of that old engine, so I think it'll be a perfect fit, personally. It helps that I absolutely adore the Original Sin games as well, so for me this is all a match made in heaven.
Eh, I stopped caring about some arbitrary concept of "ownership" of digital goods when it became apparent to me that it really doesn't matter in the end. I pay for a game, I get to play that game. That's all I'm really looking for at the end of the day. Will I have that game "forever"? Probably not, but what does that even mean? Nothing lasts forever. Obsessing over whether or not I'll still be able to play this game I just bought ten or twenty years from now is not something I feel is worth my time or energy.
