I killed the pilot out of an apache once, he was flying right for me, and I just took a pop-shot. Lucky shot I guess. 
 
Too bad his gunner was quick to jump into the pilot seat.

He didn't destroy the helicopter. He killed the pilot who was flying the helicopter; thus destroying the helicopter. 
 
Besides they're harder to do unless you're a good shot and have good internet connection. In real life that isn't possible either; even a .50 cal bullet wouldn't be able to penetrate a cockpit glass.

Psh.  Who needs to do that when you could do this?

Meh, the proper way to kill a helicopter is to land another helicopter on it. Inexplicably, even UAV + Helicopter blades = Live UAV + Dead Helicopter.

Personally I wouldn't use a sniper rifle to try and down a chopper. It's difficult to do, and is more about luck than actually aiming, or doing something skillful. Still, pulling it off would be incredibly cool. I prefer using the Gustav though, and downing the chopper with the pilot not knowing where it came from. But if you can snipe a pilot, fair enough. Congrats to whoever pulls it off.

2. Hit helicopter with Dart.
3. Bring out Uncle Carl, and allow a lock on.
4. Fire.

if the gunner had awesome reflexes, he could have swapped seats and saved the day.

Shooting helicopters out of the sky with tanks is my preferred method. Gotta love duck-hunting.

I sniped a pilot twice in one game yesterday (against a Blackhawk) and both times a gunner or passenger switched into the pilot seat with plenty of time to spare. Use rockets.

I sniped someone piloting a chopper with my shotgun, then he proceeded to call me a hacker.

I killed a helicopter (and its 2 passengers) with a UAV missile once :D
