So Mortal Kombat was banned in Australia but I decided to get it off Amazon (the Kollectors edition for PS3) and I was told by a few people I could get fined because it's illegal.

By looking at this, you will get your game seized and a 110k fine.
Risky move...if i were you, i would've bought it on eBay and ask the seller to package it strategically, or get a used copy and ask someone to put the game in a cd/dvd box or put it in a cd jacket and place it within a magazine or some type of filler mail... I'm guessing your game will be taken from you and you'll receive a fine, or if your country is ass incompetent as most, they probably won't even know.

your probably good. Worst case scenario they confiscate the game and a fine (idk about 110k). With how many marijuana seeds get past customs I wouldn't be surprised if you got the game.

Stories like this have always bothered me... the Australian government treats grown adults and citizens like mindless children. It thinks people are unable to distinguish between video games and reality. How does a population allow its government the power to level fines of more than $100,000 on ordinary people for importing a common video game?

EDIT: You should update this thread when/if you receive the game. If you aren't in prison that is.
However, and without any expressed knowledge of Australian laws, I doubt anything will happen. Having bought stuff from Amazon, the box is plain brown and since you're ordering the CE, it won't even look like a DVD/Game.
Maybe you should respect the fact that your government is trying to protect you? How would you feel if you ripped out someone's heart for reals? Probably pretty cool in the moment, but you'd regret it later when you're sent to jail for murder.

Seriously, though, Australia sounds kinda messed up when it comes to games. You'll probably be fine, OP, but there'll be at least one poor guy who gets screwed by this. Hooray for ineffective representation!
