For me it would have to be Metal Gear Solid 4 and Uncharted for the two obvious choices. The third one could be any from a bunch of others choices but I would have to go with Call of Duty 4. I would have went with Oblivion but personally I own that only on the 360 at the moment.

MGS4 really has that much replay value? I haven't played it, but I hear its good. But forever?? GTA IV which is fantastic, I beat and traded it in, once story is done its kinda boring. I played about 100 hours of Oblivion on the PC and that was it for me although I loved it.

Mine might be:

CoD4 (although I prefer keyb + mouse)
FIFA 08
Madden 09 (comes out in a couple weeks....I've decided that it counts)
Super Stardust HD

But then, I love sports games and playing multiplayer....

Civilization Revolution, flOw and Everybody's Golf: World Tour (known as Hot Shots Golf: Out of Bounds in USA).
Civ Rev offers some great gameplay for replay value, flOw is soothing and Golf is awesome.

Oblivion (can play the story with different character classes)
Warhawk (online gaming never gets boring)
UT3 (it's got mods and bot play to keep it interesting)

I was going to say COD4... but I think the first 3 games give me more choice.
