That depends what your taste in genre is and how much you can "accept" what the series throws at you at the world the anime is in. The big anime's i recommend are: One Piece (Globally reknown) Fairy Tail, Chrome Shelled Regios, Hellsing, Berserk and a new series that just came is Break Blade.
One Piece: One Piece is about Monkey D. Luffy who wants to find the greatest treasure ever made named One Piece and become the new King of Pirates! What makes this series so special is that he is not your typical pirate, he does not plunder or raise cities or have a vast crew at his hand but rather wants to go out to the world and experience it's vast adventures! His crew so for comprise of Himself and 7 extreme strong crew!
And what makes Luffy so special is that he has eaten a very special extreme rare fruit that has given him rubber power! He can stretch himself and can't get hurt på any normal physical blows! But he is still vulnerable to sharp weaponry, however eating this fruit does have a price: He can't swim and has become what the world calls an "Hammer" as physical hammers can't swim either (duh) These fruits are spread all over the world and each contain a special power. I tell you i have watched all current episodes and all the new powers that shows up just surprises me everytime!
Fairy Tail: Now i love effing LOVE this anime as i love One Piece! A young celestial wizard, Lucy Heartfilia, travels to the land of Fiore to join the magical Fairy Tail Guild. Along the way, she meets Natsu Dragneel, a teenage boy looking for a dragon named Igneel, with his best friend, Happy. Shortly after their meeting, Lucy is abducted by Bora of Prominence, who was posing as Salamander of Fairy Tail, to be sold as a slave. Natsu rescues her and reveals that he is the real Salamander and has the skills of a Dragon Slayer. He offers her membership into the guild, which she accepts, they along with Erza Scarlet, Gray Fullbuster, and Happy become a team performing various missions for the Fairy Tail guild. The fights is just awesome to watch! Each wizard you see they meet or fight has their own unique magic! And the music... god DAMN do i love it! The composer mixed Heavy Metal with celtic music! There's just TOO MUCH to cover! You will have to watch it to understand it! :D I highly recommend watching this anime more than any of the anime's i watch! One Piece used to be my fav but now Fairy Tail is in my special place: Teh <3 :D

Yea that text is taken from Wikipedia but it's been a long time since i've watched it, the series came to a brutal stop due to the Death of the creator Shūsuke Amagi. If i got the correct answer that it :p But that's what i came up with.
Hellsing: Hellsing... oh man, personally i got a mancrush one the protaganist Alucard as he is the manliest man alive and just so damn. AWESOME. BADASS. MANLY. Yea you can say he is twisted but that's my opinion, i do admit when he fights he does get creepy but at the same time looks AWESOME while doing so! OK so, the main protaganist is about Seras Victoria, a 19 year old orphan who used to be in the police force until she witnessed the death of her entire squad in front of her eyes. She got mortally wounded by Alucard after he asked her "Are you a virgin" which she answered yes.
This ment when an opposite sex like say this situation here: A male vampire sucks the blood of a virgin female human, she can become a vampire and vice versa. This is what he offered her and she accepted this.
Now there are 2 anime series of this shows, the regular which has 13 episodes each lasting about 20 mins and the OVA series which sticks closer to the manga is still ongoing each episode lasting 40 - 50 mins! But making an OVA episode takes about 6 - 7 months to produce so we expect OVA 8 this month or next! :D
Now i must warn you that the regular episodes has some degree of PG-13 warning but the OVA is bloody and i mean seriously bloody!
I recommend watching them in japanese as the voice acting there is better!
Berserk: Now this is an anime! It's about our main Protaganist who initially was a lone Mercinary but is later picked up by another band of mercinaries named: The Band of the Hawk who is led by a charismatic Leader named Griffith Who wants to rule his own land. Now Griffith isn't a bad guy, as i said he is charismatic, expert at tactics and loved by all his fellow members. This series is about Gut's spiritual seeking about who he is and what he is ment to do as all he has ever known is to swing his massive Claymore (Two handed wielding sword)
Initially before he met Griffith and his band he was a loner and a wanderer, seeking the next contract for another army and did not care about his allies, but when he lost a battle to Griffith he reluctantly joined the band. As the time passes he learns to care about his own troops under his command and thus starts his soul searching quest for who he is and what he really wants.
Unfortuently the anime series stopped at episode 25 as the company animating the episodes Filed for bankruptcy, the manga itself though continues to this very day!
Break Blade: Not much info here, first episode is still out but i can tell you it's about a boy who lives in a civilization which can use an object named Quartz which powers most of their machines. This is like the Gundam series, huge battle robots going at it, except the twist is: They are powered by Quartz which our Protaganist can't control! It's a rare birth thing where he simply can't control anything related to Quartz! However the King and Queen (whom our Protaganist knows since school) discovers a machine which none of their best robot pilots can't use! Except our Protaganist!
Well that's all the info i can write! There is only 1 episode so far and it lasts about 40 mins i think.
Well those are the anime's i recommend :) of course i said i recommend Fairy Tail the most of all! :D Hope you find the descriptions intriquing ;D
