Final Fantasy 7-10 - The legendary Nobuo Uematsu, specifically Zanarkand and Areith's Theme.
Persona 3 and 4 - Battle for Everyone's Souls and I'll face myself.
Phoenix Wright series - All of the Cornered music throughout the series.
Metal Gear Solid - Love the main theme.
Banjo Kazooie - Grant Kirkhope is one hell of a composer!
Vampire the Masquerade Bloodlines - Isolated by Chiasm

As far as anything that hasn't been mentioned before, I think the Halo series is up there. I'm not the hugest fan of the games, but the music... oh man the music!

The Heavy Rain soundtrack is pretty cool too. Reminds me of the se7en soundtrack. Really atmospheric.

Asides from that, Sonic the Hedgehog 2 (Chemical Plant Zone, anyone?), Final Fantasy X is brilliant, along with a lot of the Black Mages stuff. Mega Man is pretty good, too. There is a Black Mages style album of it, I think it's X and X-2. I liked the industrial stylings of the first Condemned OST. Shadow of the Colossus is good too.
Sonic CD (the US version, not the original japanese)You've got it backwards. The American version was complete crap whereas the JP/EU versions were brilliant. Shame the game itself is horribly overrated.
Anyway- the best OST of all time is Streets of Rage 2.
Nier has an awesome soundtrack.
Persona 4 one is also pretty damn good.
Some of the FF songs are awesome too, gotta mix and match there a bit though.
Diablo music is really memorable and atmospheric, but not something i'd listen to out of the game.
Has nobody mentioned the Mario games? Seriously, Mario themes!
Oh, Tetris too, but i guess that's not a soundtrack cause it's just one song?

Nope. I said it right. Ive heard both soundtracks and I prefer the US one. Stardust Speedway - Bad Future (US) is better than Stardust Speedway - Bad Future (JP/EU). The US title music is better. US Palmtree Panic Present is better. I can go on. The japanes tracks that were altered tended to be either over the top campy or needlessly baroque and "wall-of-soundey". It is funny though. I loved the soundtrack for years and was glad people concurred online. The i found out they hated the version i liked. Well i dont really care. US version's great." @Supermarius said:

Streets of rage 2 is really good though i agree
As for licensed affairs, Tony Hawk 2, DJ Hero, Rock Band 2, The Beatles: Rock Band and Braid (yes, the songs on the soundtrack are technically licensed, not composed specifically for the game) come to mind.
