On the minus side though you don't get to hear Ian McShane say Cocksucker better than anyone else on the planet.
Jericho. I remember the first time they canceled it, the last episode ended with a MAJOR cliffhanger. Then it came back for another 5 or so episodes and ended on another cliffhanger. OMG

Idk, there are too many out there, and there is no point in repeating stuff people have already said. I have pretty much given up on watching tv these days, because any show i like always ends up getting canned while all this tween shit keeps getting made.
As a lot of people have already mentioned, Arrested Development was awesome. Also, iam3green mentioned The Tick a few pages back. Both the animated and live action ones were awesome. For some reason, Fox decided to air the live action one opposite Friends and Survivor. It would be interesting to see how it did in a better time slot.
However, number one on my list is easily Twin Peaks. I guess it's ok though because Twin Peaks still has my favorite series finale of all time, so it's all good.

Basically, if any new TV show comes out, and it doesn't feature a psychic or otherwise super-powered police detective, forensic procedural scenario's, or hospital drama.... you may as well do yourself a favor, and don't start watching it. It'll just get canceled.
Arrested Development, Deadwood, Journeyman are ones I can think of off the top of my head. Futurama would be on their, but it's on it's way back. Good Vs. Evil (G vs E) was a show that I felt didn't get it's time to properly grow, and they were just hitting their groove when the hammer came down. Part of me would also have liked a little more Rome, but I think they did everything they had to by the end of that show.
Freaks and Geeks...anyone who doesn't like that show deserves to have love made to them by Larry King
