There's a bunch of ways to do it (such is the beauty of Photoshop) but your best bet is to learn how to make a path using the Pen tool. Open up the Paths window and click on Create New Path. Then use the Pen tool to draw a path around the subject. If you've never used anything with handles and curves before it may take some getting used to, but once you get the hang of them it makes etching stuff a breeze.
Alternatively, if you can't be bothered with that, use a mask. You can roughly cut out the subject, place it on top of whatever you want, and then use a mask to add or subtract bits as you see fit. Masks are awesome for blending your subject into something else, such as... oh, I don't know, maybe grafting a new Giant Bomb staff member's head onto another person.
