@ShadowMountain: Yes, Umineko is his latest work, it's also regarded as better then Higurashi in Japan (parts of it at least). The best things Mangagamer have right now are Kira Kira and Higurashi. On Jlist I would recommend "A drug that makes you dream" as it's written by Romeo Tanaka. Fan-translated VNs that are worth a look are Cross Channel, Sharin no Kuni, The Devil on the G-string, and Sekien no Inganock -What a Beautiful People- (Kaos would like this as it has a neko)
@Aus_azn: The reason why Fate/Stay Night hasn't been brought over is because the creators want a million dollars for it. @swoxx: The best way of finding a good VN to start out with is by going on /jp/
@FlyingRat: The reason why Persona 3 & 4 didn't have an option for Japanese voice acting is because Atlus couldn't fit it on the disc. They said they would've if they could.
