Whats youre go to game for getting frustration out??
I wont go into detail other than to say that im FUCKIN PISSED OFF! and shooting dudes in the face in Uncharted 3 just aint cutting it right now

At the moment it's Hot Pursuit (yeah, I'm a waaaaaaays behind) but it probably applies for most of those cops vs. racers NFS games, I haven't played The Run so I'm not sure. Something about causing a car to hit a roadblock before turboing right into the front of the car, quite pleasing.
Left 4 Dead 2. Grab a frying pan or something and go.
I'd have to say GTA or saints row. Mowing down pedestrains always calms me down. Or try dead rising 2, just grab a blunt object and start swinging or just throw a bench...your choice.
For years my go to game was Vice City. Now I'd be more likely to pick a high intensity racing game like an old school Need For Speed or Motorstorm Pacific Rift, or choose a chill out game like Flower or Pixel Junk Eden.
League of Legends, DOTA, Heroes of Newerth, or any game similar to those. Something about the enemy team getting bullshit kills really makes me happy.

Really? I love the game but it actually causes frustration for me most of the time. Me being crap at it might have something to do with it.
Hulk: Ultimate Destruction, nothing get's rid of stress better then being a giant unbeatable monster man and smashing shit.
This is the reason why L4D2 is installed on my system.Left 4 Dead 2. Grab a frying pan or something and go.
Deadly Premonition. So much crazy, also how can you not smile and feel chilled when the whistle song comes on.
God of War, and if that's not available, set up a private match in Gears of War 3 and fill it with easy bots. Then destroy them.

That game was awesome on the PS2. I'd also suggest prototype since it was basically ultimate destruction on next gen consoles. It was the same developer as well.
OP, I'd also suggest playing civilization revolution on the easiest difficulty and just build up your forces and obliterate your opponents.
@jozzy: I should narrow it down to Hot Pursuit mode. The 1 vs. 1 dogfights and time trials can get really annoying at times, the Hot Pursuit games are just chaotic and awesome because there's so many targets to go for (and zap with EMPs!)
Not a current suggestion but I also liked the Wolverine game (vastly superior to the movie which is just weird). It was button mashy like a Marvel Ultimate Alliance game but you're Wolverine all the time, being badass, and there's loads of blood. At one point you beat the everloving hell out of GINORMOUS ROBOT. You beat up his feet and then flying in the sky and you beat up his head and you punch in his eyes. That should have been the final boss because "Deadpool" was rubbish.
Dead Rising? doesnt really require much effort and you get alot've gore for your time. If you want something with a bit more resistance, pretty much any fighter should do. & I know it's been said but any open-world havok focused game like, Just Cause, Saints Row, Prototype, Infamous etc. are all good stress alleviaters.
EDIT: Just thought I'd add my personal favourite stress killer Ninja Gaiden Black. I know it doesnt work for everyone but I find punishing games make me care less and less about real life problems, and after awhile anything that was bothering me outside of the game was a distant thought. Maby not a healthy solution but it works.
Whack-A-Mole. Great stress reliever, however if you don't have a Whack-A-Mole machine in your den I find that fighting games that include a game mode where you keep fighting guys without round breaks such as DOA4's Survival Mode, Soul Calibur 4's Tower of Lost Souls or Mortal Kombat's The Challenge Tower mode work well.
There's no such thing.
Every game in the world is based on either a lot of intense challenges, irritating AI or movement, frustrating design or frustrating lag/fps drops.. There's no such thing as a smooth (technically) and relaxing (game design) game. Just a handful like Flower and once you blow through those, it's game over.
I ALWAYS look for such a game since I get frustrated a lot, but it's always something that requires either high concentration or consistent skill or a lot of reading or or or.... It's always a headache.

Well y'see... Nothing gets the rage out like rolling shit up Katamari Style. I would recommend We love Katamari, best iteration so far.
Red Faction: Guerrilla. No game does a better job with building destruction. A couple of well-placed rockets in that game is as cathartic as video games get.

Playing a private match with just bots on casual is a very soothing experience.
