Right now, I am working my way through 400+ episodes of One Piece. It's fantastic. Much better that what aired on the cartoon network. I suggest you seek out the Kaizoku Fansubs edition for the first 300 episodes. After that, it get a bit spotty, but if you keep looking you can find them. There are free streaming sites for all 400 online, too. The fan-subbed versions have all the blood, profanity (lots of it), sexual situations and distinctly Japanese humor that was cut from the early North American release. If you do wind up liking what you see, I also recommend The Slayers. It's a medieval series with monsters and magic, etc...but also funny and full of high adventure like One Piece. I often count it as one of my favorites. If you are into serious anime that is unique then I stongly suggest Last Exile. You really can't go wrong with this story. It's also an amazing looking series, as well. If you are into school girls, then you may want to check out Negima or Maburaho.

If you're already watching the Adult Swim stuff, Death Note definately needs to find it's way into your viewing, just great stuff there. If you're looking for a "mindf**k" try Gantz or Paranoia Agent, both will do the trick. Gantz has a heaping dose of sex and violence, so be warned there. If you're looking for school girls/action, head towards Tenhjo Tenge or try out The Gokusen (which is underrated and awesome) . If you're looking more slice of life/romatic comedy, Love Hina is a standard, but try out His and Her Circumstances or Suzuka as well.
If you want schoolgirls and a "mindf**k", go for School Days. Nice Boat...
Death Note is absolutely amazing. If your taste is more obscure then there is always Neon Genesis Evangelion.
If you want school girls, there is Great Teacher Onizuka. It's a little too blatantly perverted for my taste.

The Melancholy of Haruhi Suzumiya
One of the most recent action anime to watch is Blassreiter. Not only does it have over the top action, but there are scenes in it that made me teary eyed. It has an interesting story and some very well developed characters. The series is 24 episodes long.
Another really good recent action anime is Kaiba. The art direction makes it seem really kiddy but once you get past it, you will discover a story that is comparable to the star war series in terms of its scope and how epic it is trying to be. This anime too has its heart warming moments. The series is only 13 (or l1) episodes long.

Tengen Toppa Gurren Lagann is just amazing. I also highly recommend Eureka 7. I personally put TTGL and E7 in my 'god rank' anime. I also recommend RahXephon, Full Metal Alchemist, and Death Note.
Love hina is really good, its pretty old but it will make you laugh a ton, its basically about a dude who gets stuck running an all girl hotspring bathhouse/dorm. Super funny sutff.
I just finished watching Black Lagoon and id reccommend that too if your looking for some straight up action, its in english though, if thats a turnoff or on for you. I usually avoid english dubs as with all sane people, but its really good in english, I suspect it may have been made in the states, it has a unique style to it.
Also all the gundam animes have really good english dubs, so dont be afraid of those if thats all you can find, I enjoyed Gundam Wing, Seed, and 00 in english as much as japanese.
Also Death note has all the suspence and crazy cliffhanger-ness of Code geass, but with less action. When people describe Code Geass, they say its Death Note meets Gundam.
So I would recommend checking out both of those animes.
